Kale truly is a superfood -- see link below for its many benefits -- and although I know that I should eat it more often, it's not one of my favorite vegetables. When it comes to greens I prefer spinach, swiss chard, escarole, broccoli rabe and other leafy lettuces. I've added slivers of kale to salads and frittatas, and I've tried steaming, sauteing, etc., but just haven't come up with a foolproof recipe that I really like -- at least not until now!
