Healthy Eating Tips:
- Try organic applesauce as a terrific fat-free substitute for some of the oil in cakes, muffins, pancakes, waffles, etc.
- Roast a variety of colorful organic vegetables in the oven or on the grill -- eggplant, zucchini, yellow squash, red, green and yellow peppers, onions, shallots, garlic, mushrooms, etc. -- drizzle them with extra virgin olive oil, balsamic vinegar and your favorite seasonings and eat them hot or cold. They are easy to prepare, present beautifully when arranged on a platter and they're a delicious and healthy addition to frittatas or omelettes, on pizza, in sandwiches, or on flat bread and crackers. They are also great with salads -- try augula. If you like, add a little fresh mozzarella, cheddar or other cheese. Other veggies that taste great roasted are asparagus, beets, broccoli, brussels sprouts, carrots, fennel, string beans and sweet potatoes! Be creative and enjoy!
